Thai noodle salad

From the Little Vegan Monsters Cookbook

Serves: 4-6

Soak in boiling water:
3 ½ oz rice noodles or rice pasta noodles

Let stand5-8 minutes or until noodles are soft.

In a large saucepan sauté:
2 carrots, shredded
4 C. cabbage, shredded
4 cloves garlic, minced
1 T. ground ginger
3 scallions, chopped
½ t. sesame oil
2 T. unrefined sugar
juice of 1 lime
2 T. tamari
2 t. chili powder
1 T. tomato paste
2 t. peanuts, chopped
2 T. cilantro, chopped

Add in:
Noodles

Serve with lime wedges.
